ANTI-PASTI WITH RICOTTA

The ricotta anti-pasti is a quick and fresh summer recipe inspired by Italian cuisine. It is very easy to prepare and can constitute a starter or a side dish. Artichoke and sun-dried tomatoes are particularly well-suited for this recipe and offer an interesting flavour combination to the ricotta. We recommend a very fresh good quality ricotta, the Moulins Mahjoub artichokes, sun-dried tomatoes in extra virgin olive oil and wild mountain capers. A mild or medium fruity extra virgin olive oil is ideal for the finishing and can enhance the personality of the various ingredients.

  • Remove the tomatoes and artichoke hearts from the jars and place them on a large plate
  • Place a tea spoon of ricotta on the the sun-dried tomatoes and about 2 table spoons on the artichoke hearts
  • Pour a few drops of the extra virgin olive oil over the sun-dried tomatoes and artichoke hearts
  • Drizzle the zaatar on top
  • Decorate each tomoto and artichoke heart with a caper
