Beyond organic… Finca La Torre is a biodynamic olive farm. It means that it follows a holistic, ecological and ethical approach to farming, food and nutrition. Its certification standard is called Demeter, which refers to the Greek goddess of grain and fertility. It is often referred to as the golden standard of conscious farming.
In their farm about an hour drive from Malaga, Finca La Torre has started as an experiment in the production of olive oil of the highest quality and taste. The modern mill is located right in the middle of the trees and allows immediate processing of the fresh olives. This is one of the recipes behind the unique taste of their oils.
The farm led by Victor Perez quickly rose through the ranks, winning the Mario Solinas Quality Award, the Alimentos de Espana, BIOL, Flos Olei and many more awards year after year.
It is a perfect illustration of how a young generation of producers is radically changing the world of olive oil. Creating olive oils with real personality which can radically change a dish. You should now call your recipe: hojiblanca extra virgin olive oil with a beef roast and spring vegetables and not the other way around.
Their oils, similarly to some top olive oil producers, are reserved by a customer base looking for the authentic taste of a particular terroir and olive variety, similarly to the grand crus in the wine world.
