The aix & terra apricot jam with calissons from Aix en Provence is referred as the jam of the Kings. calissons are a traditional French candy from Provence region. It is made of paste of candied fruit and ground almonds topped with a thin layer of royal icing.
The small pieces of calissons give a crunchy feeling to the jam. We recommend it on toast, muffins, scones or on crêpes. The recipe reflects the philosophy of aix & terra , sourcing the best ingredients form the Provence and fine-tuning traditional recipes with a Michelin star chef, Julien Allano.
